Description
The food item Kategna (ቃተኛ) is a comforting, soulful appetizer or breakfast dish made from injera (fermented teff flatbread). Right after baking, fresh injera is brushed generously with warm nitir kibe (spiced clarified butter) and a heavy dust of berbere spice mix. It is typically toasted on a mitad (clay stove) to give it a delightful, crispy texture, and then rolled or folded up to serve warm.
